As a Chef de Partie (Breakfast Chef) , you will take ownership of the breakfast section, ensuring the highest standards of food quality, consistency and presentation during the morning service. Working closely with senior chefs, you will play a key role in delivering an exceptional breakfast experience, preparing and cooking dishes to specification, maintaining organisation and efficiency, and contributing to a seamless and refined culinary experience within a luxury hospitality environment.

Key Responsibilities

• Prepare, cook and present breakfast dishes according to recipes, quality standards and presentation guidelines.
• Manage the breakfast section, ensuring consistency, efficiency and smooth service delivery.
• Prepare a range of breakfast items, including egg dishes, pastries, hot buffet items, continental offerings and à la carte selections.
• Ensure all mise en place for breakfast service is prepared and organised to the highest standard.
• Regulate temperatures of ovens, grills and other kitchen equipment to ensure optimal cooking conditions.
• Monitor food quality, portion control and presentation to maintain the highest standards.
• Assist with special dietary requirements and guest requests when required.
• Maintain accurate food logs and ensure compliance with food safety standards.
• Communicate effectively with the team during service to ensure smooth operations.
• Inform senior chefs of excess stock for use in menu planning and to minimise waste.
• Liaise with Food & Beverage teams regarding breakfast menu items, special requests and availability.
• Ensure all work areas are clean, organised and compliant with hygiene and sanitation standards.
• Report maintenance issues, safety concerns or equipment faults promptly.
• Follow all company policies, health and safety, and food safety procedures.

Core Competencies

• Proven experience as a Chef de Partie/Breakfast Chef within a high‑quality, luxury or fine dining environment
• Strong knowledge of food preparation, cooking techniques and kitchen operations
• Experience preparing both buffet and à la carte breakfast offerings.
• Passion for high‑quality ingredients, presentation and flavour
• Excellent organisational and time‑management skills
• Ability to work under pressure while maintaining consistency and attention to detail
• Knowledge of food safety and hygiene standards (HACCP)
• Strong communication and teamwork skills
• A proactive and positive attitude with a willingness to learn and develop
• Professional presentation and a commitment to excellence
