About the Role
Our client is seeking a talented and ambitious Sous Chef - Banqueting to support the Head Chef in managing the culinary operations for events in Portsmouth . This role is essential for ensuring the consistent delivery of high-quality dishes for a wide range of banqueting functions, from large-scale corporate events to intimate private parties. You will be involved in menu planning, food preparation, kitchen management, and maintaining impeccable hygiene standards. Key Responsibilities
- Assist the Head Chef in the planning, preparation, and execution of all banqueting menus and services.
- Supervise and guide the brigade of chefs and kitchen porters during service, ensuring efficiency and quality.
- Manage food production, ensuring all dishes are prepared to the highest standards of taste, presentation, and consistency.
- Maintain rigorous standards of hygiene, food safety, and cleanliness throughout the kitchen areas.
- Control stock levels, assist with inventory management, and minimize wastage.
- Deputise for the Head Chef in their absence, taking responsibility for all kitchen operations.
Requirements
- Proven experience as a Sous Chef or Senior Chef de Partie, with a strong background in banqueting or high-volume catering.
- Solid understanding of classical and modern cooking techniques.
- Proficiency in food safety regulations and HACCP principles.
- Excellent leadership and team management skills.
- Ability to work effectively under pressure and adapt to changing demands.
- Strong organisational skills and attention to detail.
