Job Description
Key Responsibilities
Kitchen Operations
* Lead the day-to-day running of the kitchen.
* Deliver consistent food quality and presentation in line with Smoky Boys specifications.
* Ensure ticket times and service standards are consistently achieved.
* Monitor food preparation, cooking and plating during every service.
* Maintain a clean, organised and safe kitchen.
Team Leadership
* Create rotas that meet business needs while controlling labour costs.
* Coach and motivate the team to achieve exceptional performance.
* Conduct regular performance reviews and training sessions.
* Promote a positive, professional and respectful working culture.
Food Safety & Compliance
* Ensure full compliance with Food Hygiene Regulations and HACCP procedures.
* Achieve a 5-star food hygiene standard.
* Manage allergen controls and ensure accurate food labelling.
* Complete all daily, weekly and monthly food safety documentation.
* Ensure health & safety policies are followed at all times.
Stock & Financial Control
* Manage ordering and supplier relationships.
* Control food GP by minimising waste and ensuring correct portion control.
* Monitor stock rotation and reduce food waste.
* Work within agreed labour and food cost budgets.
Menu & Standards
* Ensure all recipes are followed exactly to Smoky Boys specifications.
* Work closely with senior management on menu development and seasonal specials.
* Drive consistency across every service.
* Maintain high standards of cleanliness and equipment maintenance.
Skills & Experience
* Previous experience as a Head Chef or Senior Sous Chef in a high-volume restaurant.
* Strong leadership and people management skills.
* Excellent knowledge of food safety and HACCP.
* Experience managing food cost, labour cost and stock control.
* Ability to perform under pressure while maintaining quality.
* Passion for BBQ, burgers and premium casual dining.
* Strong organisational and communication skills.
